It’s been a busy week and now the weeks are starting to fly by with crazy schedules. My oldest daughter had two volleyball games this week, which are super fun to watch by the way. I’m kind of into it. I get really mad when her team messes up, but then when I practice with her I understand why..it’s kind of a hard game.
The weather got down to 58 degrees last night, which called for a loaf of my pumpkin bread with cream cheese frosting. It’s baking right now and the smell has got me all about Fall vibes. I’ll probably eat half the loaf once I top it with cream cheese icing and cancel out the gym session I’m about to attend. I’m just trying to live my life in the best way. Look at this gem..
I thought some of you type A’s might be trying to get organized, meal prepping ahead, and all the wonderful things, so I’ve composed a list of my 5 current favorite weeknight meals.
1. Cajun Shrimp & Sausage Pasta
This first one is brand NEW to the blog this week, and it’s really packed with creaminess & flavor. Don’t let the word “Cajun” turn you off if you have kiddos. The heat for this pasta is really all in the Andouille Sausage and the kids can pick around that.
This bad boy is ready in 30 minutes, but buy the shrimp peeled and deveined already, or you are looking at 45 minutes and some extra labor.

2. Mediterranean Rice
This is a NEW recipe too and it’s healthy and so tasty! Turmeric and paprika help the basmati rice turn this vibrant yellow and it’s topped with roasted almonds. It’s a really versatile side dish and you could pair it with my panko chicken or baked chicken kofta.
3. Sausage Gnocchi
An absolute favorite of mine & frequent dinner at our house. It’s ready in just 20 minutes and uses only 1 pot. Miracles really can happen.
4. Baked Chicken Tacos
Your taco tuesday will be forever changed by this Crispy Chicken taco recipe. They take a little longer than simple ground beef tacos, but they have the flavor to make it worth it.
5. Chili Lime Salmon
Another 20 minute meal & super healthy! This is great paired with my mango pico de gallo and coconut lime rice. Also, I’ve got a mean Mango Mojito you probably want to check out!
