This was my first busy week of Summer, other than traveling, which I don’t count as busy because it’s so fun. I spent most of my days hauling the kids off to camp and nights at the golf course, for my oldest daughter’s tournaments.
I think I sweat off about 4 pounds, which was probably necessary, because I’ve been eating good. I’m spending today rehydrating and doing laundry before we spend next week in Orlando. It’s gonna be a hot one!
I’m seriously so excited for Disney. It’s been a year and it’s a very nostalgic place for me. I hold so many great memories with family and if you can get past the large crowds, expensive prices, and chaos, Walt created something really special.
Walt would also want them to bring back the original rice krispie treats…the new ones are gross and everyone knows it. I’m so passionate about it, that I wrote a letter to corporate. Just bring the production back in house, so I can sleep at night. Got me seeing red.
Here’s a photo from the early 90’s of me and my daddy in the Magic Kingdom. He fell in love with Disney right from the beginning and brought us along for the ride. Georgie still makes it to every trip. My kids know its not Disney without Poppa.
I spent most of my vacations as a child there and I think it helped bring out a lot of hopes and dreams. I’m about as far away from a realist as they get, and it drives my husband (a realist) crazy. He still loves me though, and I think I’ll be off in Neverland for the rest of my life. At least I hope so. I like it here.
This Week’s Main Dish
It’s hot and we need fast meals with little effort. Bring in the Shrimp! It seriously cooks for about 3 minutes per side and couldn’t get any easier. Plus, these Argentina Pink Shrimp are so crunchy and delish!
I love these Shrimp served over my coconut rice, pictured below. They are also really great for leftovers the next day served cold in a lettuce wrap topped with avocado, carrot, cucumber, cilantro and a nice squirt of sriracha mayo. YUM!
The Side Piece
This rice is light, fluffy and oh so yummy! It has a subtle coconut flavor and is topped off with cilantro and lime. It pairs perfectly with shrimp, chicken, veggies, and steak. Plus, it’s ready in less than 30 minutes.
