Happy FriYAY! This week’s content was inspired by the fact that I hate waiting for seating at restaurants and will be celebrating Cinco de Mayo with some fantastic margaritas & Mexican recipes in my own home.
Don’t get me wrong, I love a good Mexican restaurant, but Cinco de Mayo is the only day of the year that I won’t go. The other 364 days of the year, I’m always down for chips and queso. This is what my mid 30’s looks like, hahahah!
I don’t drink a whole lot, but I love a good margarita. I’m usually one to pick a fancy flavor like Mango, but I may have been missing out with the classic Lime. It always tastes fake at restaurants and bars because they use the margarita mix, but I used fresh squeezed limes for these margaritas and they are over the top delicious..highly recommend!
These Lime Margaritas are a classic recipe, but I used Tajin seasoning around the rim, which tastes like a combination of chili powder, lime and salt. It’s fantastic and looks so much more festive versus plain salt.
It’s optional, but I also used a frozen jalapeño and grated it over a microplane for the trendy jalapeño dust that has been going around on social media.
It annoyed me at first because I couldn’t get the jalapeño to fall off my microplane, but the pepper wasn’t frozen enough. The jalapeño needs to be in the freezer for 3 hours to overnight. Basically it needs to be a brick.
I love the hint of spice it brings in and it’s almost like a dust, so the cocktail stays super smooth.
Just a note, these Margaritas are pretty strong, so drink them accordingly.

Let’s get into the food….
I’m getting started with this Mexican Street Corn Dip. This doesn’t even look that good, but I’m telling you right now, it’s one of my most requested recipes from my extended family. Sometimes I even make two batches to ensure I get a bite. Serve it with Tostito Scoop tortilla chips or as a taco topping. I eat in plain right out of the fridge too.
Next up are these Crispy Chicken Tacos. The chicken is marinated in spices and the taco shells have a nice crunch. They’re baked at the end, which is nice because you can get a whole batch out hot and feed everyone at once.

Lime Margarita Recipe with Tajin Rim
Servings: 2
Time to Make: 10 minutes
Ingredients
Margaritas:
4 ounces fresh lime juice (2-3 limes)
1 ounce Grand Marnier
3 ounces Tequila (Casamigos Blanco or Patron Silver preferred)
2 ounces Simple Syrup
3 cups of crushed ice
Tajin Rim and Garnish:
1 tablespoon Tajin Seasoning
1-2 tablespoons fresh lime juice
2 lime wedges
Optional: ¼ teaspoon of frozen Jalapeño shaving, shaved on microplane (Freeze a whole jalapeño for 3-4 hours or overnight for the best texture)
Instructions
Grab two margarita glasses, or cocktail glasses, and two small plates: the first plate will have 1-2 tablespoons of fresh lime juice, and the second will have 1 tablespoon of Tajín seasoning. Spread the Tajín seasoning out into a small circle. Set the entire rim into the lime juice, rolling around to coat the entire glass. Keep the glass upside down and dip the lime juice coated rim right into the Tajín seasoning. Repeat with the second glass and set aside.
Freshly squeeze the lime juice into a pyrex dish or bowl.
Fill a cocktail shaker half way full with ice. Pour in lime juice, grand marnier, tequila, simple syrup. Shake to combine.
Carefully fill each glass ¾ full with ice, without touching the Tajín rim. Pour margarita over the ice. Top with lime wedge. Optional: Using a microplane, zest the frozen jalapeño over the tops of the glasses. Use just a dusting for flavor so it's not overpowering and too spicy. Serve and enjoy!
Notes:
Make sure to cover the rim of the glass entirely with lime juice or the Tajín will not stick well.
The Jalapeño needs to be in the freezer for several hours before it will shave into almost dust on the microplane zester. If it doesn't fall off the bottom of the zester, it's not frozen enough. If this happens, just stir a bit of it into the cocktail.
Serve these margaritas right away to avoid the ice melting.
These cocktails are strong, so make sure you or guests drink responsibly. There is no sour mix in the ingredients and everything is fresh, with a significant amount of alcohol. They also don't taste that strong because of the lime juice.
