It’s FriYAY and I couldn’t be more excited to get some sleep this weekend. Last Friday, I mentioned we were dog sitting, and as planned, we got absolutely no sleep. Hutch, our puppy, and his cousin Wendell (a 3 year old boxer), were both psycho all night. I’m talking barking, running around, absolute craziness!
Our youngest also picked up some nasty virus at school and had a fever all weekend, so that was fun. We made it though!
I cooked a ton this week and got really into the season and I’m so excited to share NEW recipes with you.
Pumpkins
It’s supposed to start cooling off in NC and I fully intend on drinking my first Starbucks Pumpkin Spice Latte. Although, I’m not going to lie, I may have found something better. This week, I created a Pumpkin Cold Foam recipe that pairs really well with Cold Brew or iced coffee.
For this drink below, I mixed my brown sugar syrup into cold brew, then topped it with the pumpkin cold foam. It was ridiculously good, and I highly recommend.
If you’re loving Pumpkin recipes right now, don’t sleep on my Pumpkin Bread with Cream Cheese Frosting. A slice of this bread would go perfectly with this coffee!
Pears
This week I updated an old favorite, which is a Roasted Pear Salad with honey vinaigrette. If you love goat cheese, this recipe is for you. The pears roast in the oven until soft and warm, and are then topped over a bed of baby arugula and goat cheese crumbles.
The cheese slowly melts into a creamy texture and it’s topped with glazed pecans. It’s incredible and really easy to make with little chopping required.

Apples
This week I recipe tested a graham cracker crust with apple pie, and it was a winner! It also has a crumble topping and will 100% be on my Thanksgiving dinner table this year. You’ve got to try this one & don’t forget the vanilla ice cream.
Apple Pie Tip: When making any apple pie, use a variety of apples. In this recipe I use mostly sweet, but add in a large granny smith for tart flavor. It adds different flavors and textures, which make the best apple pies. You want to use really crisp apples always for apple pie. Grab a few extras for the recipe just in case you run into some mealy ones.
