April Showers Bring May Flowers & Summer Recipes
New Recipes as we move into Summer, plus a little garden + travel.
I don’t know where this Month has gone! May has been all about travel and the garden, with lots of cooking sprinkled in throughout. I’m also realizing that soon the kids will be out of school, which means sleeping in (yay) and also chaos. Moms..you know exactly what I’m talking about.
Travel
We had the opportunity to go camping in Ocracoke, in the Outerbanks, and I had to get out to the sound for clamming. Here’s me living my best life.
We found about 18 clams and cooked them at camp in some white wine, butter, garlic and sprinkled them with parsley before my youngest daughter and I gobbled them up. It was the highlight of our trip for me. So fun!
Gardening
I celebrated Mother’s Day at my favorite local garden store. We have a new spot for the garden this year, because of our crazy puppy, Hutch, who is never to be trusted.
My daughter used her shells from the beach to surround the garden, which was the cutest idea from my husband. We planted a ton of peppers, tomatoes, cucumbers, and my personal favorite-fresh herbs.
Cooking
Summer is coming and it’s all about quick and easy recipes. I like to prep things ahead, like I did with this BBQ pulled Chicken recipe made in the dutch oven.
Easy Weeknight Recipe
This recipe only takes an hour and it pairs really well with baked beans, coleslaw, and dinner rolls. If you want an extra side dish, pair it with my Hawaiian Macaroni Salad recipe or White Cheddar Mac and Cheese.

A Decadent Breakfast
I also made these sweet cream pancakes this week, which are the most fluffy and delightful little things. I know they aren’t the most figure friendly recipe for Summer, but I mean it’s breakfast and you’ll burn it off, so what the hell…
They are amazing topped with maple syrup & butter or lather them in fresh fruit and whipped cream. Either way you can’t go wrong!
