For those of us who don’t love routines and waking up at the crack of dawn, the next few weeks will zoom by, and sleeping in will come to a sad end. Plus, I’m going to miss my kiddos.
I’m trying to make the best of it though. We did lots of school shopping this week and my kids are both excited for a new year. They were trying their first day outfits on yesterday with book bags and all..it’s so cute. I remember the beginning of school being so nerve wracking, but also super exciting at the same time. I love it for them.
As an adult, preparing for the year looks a little different. I’ve been organizing and cleaning (eww), and a little bit of cooking. I’m on a mission to be more prepared this year with weekday breakfast and school lunches. I refuse to have unknowns of what to pack the morning before school. It’s just not a good look on me and starts my day off terribly wrong.
If this sounds a bit like you, I’ve got some really good lunchbox recipes to get you started for the year, and they’re all so easy.
If you don’t have kids, these recipes are great to pack for the week ahead. They’re not like butterfly or ducky shaped or anything that will get you made fun of at work.
Turkey Pinwheels
We’re starting off with these Turkey Roll Ups, aka Pinwheels. They begin with flour tortillas, then a cream cheese spread with homemade taco seasoning, and they are stuffed with turkey, cheddar cheese, and peppers and onions. You can totally leave the veggies off, if you or your kids aren’t a fan.
They only take 5 to 10 minutes to whip up! These are also really awesome for a game day appetizer and taste amazing dipped in Ranch or my Avocado Crema or Chipotle Mayo!
Pasta Salad
My kids always ask for pasta salad in their lunches and I usually just serve it with some fruit on the side and a couple triangles of pita bread.
This week, I made a Chickpea Pasta Salad with a Creamy Balsamic Dressing. It’s good..really good. The kind that I can’t stop eating straight out of the fridge, right from the tupperware. I love it for kids, because you can pick and choose what you add in. Plus, you get some extra protein from the chickpeas.

I hope it gets you inspired to be a bit more creative with lunches this year. I know by the end of last year, I was struggling to put a stinking lunchable in a bag. New School Year = New Vibes..We can do this!
