I hope you had a wonderful July 4th and hopefully you’re taking the whole weekend off to enjoy the real kickoff to Summer!
The heat has officially arrived throughout North Carolina and the only way not to melt is to immerse yourself in water. We don’t have a pool, but thankfully the lake is close.
We had the best time at the beach last weekend. Here I am enjoying coffee in the morning (one of my favorite things). We went to Wrightsville Beach in Wilmington and the water was the clearest I’ve ever seen it.
My husband was able to relax from his stressful job. We ate a ton of oysters, which were so good. These ones below were my favorite from the Flying Machine Oyster Bar. They had a house margarita Mignonette sauce, which was so stinking good paired with the oysters.
Chopped Italian Sliders
So, I’m very big on textures in recipes and love the viral grinder salad for Summer. It’s super refreshing and I made it a bunch last summer. This Summer, I’ve combined it with King’s Hawaiian Rolls for these Chopped Italian Sliders.
There’s a few things I love about these Sliders. They’re super easy to whip up in just 15 minutes. They are full of flavors from the meat trio, provolone cheese and tangy salad topping. Plus, these sliders are really refreshing and bite sized for lunch, a snack or make them for a quick Summer dinner.

Taco Stuffed Peppers
I love a typical stuffed pepper with marinara, beef and rice, but I wanted something more Summer inspired. Bring in the Taco Stuffed Peppers!
These bad boys are ready in less than an hour and packed with ground beef coated in enchilada sauce and cheese. Then, they’re topped with all the taco toppings, like lettuce, onion, tomato, cilantro, sour cream and tortilla chips. A seriously delicious Summer dinner!

Chopped Italian Sliders
Makes: 12 Sliders
Time to Make: 15 Minutes
Ingredients:
Sliders:
12 pack of Original Hawaiian Sweet Rolls
¼ lb deli ham sandwich slices
¼ lb deli turkey sandwich slices
¼ lb genoa salami
¼ lb provolone cheese deli slices
Salad Topping:
¼ cup mayonnaise
1 tablespoon red wine vinegar
¼ teaspoon salt
½ teaspoon garlic powder
½ teaspoon oregano
¼ head of iceberg lettuce (about 2-3 cups of chopped lettuce)
2 large pepperoncini peppers, stem removed and diced with juices
¼ cup mild banana pepper rings, pickled in jar
¼ cup red onion, thinly sliced
Instructions:
Preheat the oven to 350 degrees for hot sliders. In a small bowl, whisk together mayonnaise, red wine vinegar, salt, garlic powder and oregano until combined. Set aside.
Rinse and dry iceberg wedge, then chop into fine pieces of lettuce.
Into a large bowl add in lettuce, onion, pepperoncini and banana peppers with juices. Pour the dressing over the lettuce and toss to combine. Refrigerate until ready to use.
Slice the Hawaiian Rolls through the center to create a top and bottom portion. Place both portions on a cookie sheet with the inner portion facing up. Layer turkey, ham, salami then provolone cheese on the bottom half.
Bake for 8-10 minutes until toasty and the cheese is melted.
Top with ½ of the grinder salad mixture, then close the sliders up with the top portion of the rolls.
Slice into 12 individual sliders. Serve with remaining lettuce topping. Enjoy!
Expert Tips:
I like to top the sliders with half of the salad topping and save half for serving. This makes them easier to cut into 12 pieces too, without losing a bunch of the salad topping (which is my favorite part).
If you're planning to eat them later, I suggest storing the grinder salad topping in a separate bowl and then topping before eating.
Substitutions and Variations:
Load up on double the meat if you want or add in other deli classics like roast beef. I would stay away from deli meats with flavoring like maple or cajun, as they don't fit in with the Italian flavors.
If you don't eat iceberg lettuce, use Romaine hearts as a substitute.
Not big on provolone cheese? Any sandwich style cheese works great, like American or Baby Swiss.
I like the original King's Hawaiian Rolls, but the savory butter flavor would be tasty too.
