Soup is by far one of my favorite recipes to cook and eat. Once September rolls around, I grab that dutch oven and start making soup and sandwiches for every meal (even if it’s 80 degrees out).
This past week, the kids gave me another cold and all I could think about was soup. I couldn’t believe I didn’t have a Classic Chicken Noodle Soup recipe on the blog, but now it’s there.
This Chicken Soup is really traditional with egg noodles, carrots, celery, onion and lots of fresh parsley. I pretty much always use Chicken Stock in my soups for a heartier feel versus Chicken broth, which I find to be much more watery.
The recipe uses cooked chicken and we had smoked a chicken on the Traeger over the weekend, so I used the meat from that, but I recommend a rotisserie chicken from the store. It’s quick, easy and the meat is always nice and tender.

Sorry about my voice..it’s pretty bad from the cold.

Another great recipe for when you’re sick is this Pastina Soup. It’s been really popular on the blog all winter and Italian people call this soup “Italian Penicillin.”
It has really similar ingredients to chicken noodle, but uses small pastina pasta and an egg in the mix. Kids absolutely love this soup and I grew up eating it at my best friend Alex’s house. Her dad, John, used to cook it for us and I remember it tasting so good all the time, but especially when I was sick.
This Chicken Tikka Masala Soup is brand NEW and shiny to the blog as of last week and it’s AMAZING! It has so much flavor and is really a must try! Serve it with warm naan bread for the full experience and don’t forget the fresh cilantro.
There are seriously so many soup recipes on the blog and I hope you try all of them.
All is well in the house now with no yucky germs left and good thing because we’re headed to California this weekend. I get to meet my brand new nephew Felix and we’re going snowboarding!
It’s my kids first time flying, so wish us all luck. They will probably do way better than me. I get crazy nervous and sweat a ton, but my plan is to act like I’m doing great and I have no fear.
I’m only doing carry on and will need to leave my pillow behind..tears. The struggle is real. I also couldn’t fit my ski jacket into my bag, so I’ll be wearing that even though our first flight is to Arizona and it’s supposed to be 80 there, haha!
I’ll try to share some of our trip on Instagram, so follow me over there at Simply_Made_Eats if you’re not already.
I hope everyone has the best weekend and makes a big batch of soup! Happy Cooking~
