January is all about getting started on the right foot and I hope everyone is having that experience. Mine has been bumpy, but I’m hoping we are clear of sickness for a bit. My little one keeps bringing home weird germs. If you’re a parent, you probably feel the same way.
Anyways, let’s continue eating healthy to keep our immune systems going (at least until those Super Bowl parties).
This week, we’re talking about some healthier lunch ideas. When I say healthy, I’m not talking bland chicken and broccoli. I mean bright, colorful foods with flavor!
Easy Lunch Ideas
We’re kicking this week’s newsletter off with these Chicken Wraps with Honey Mustard and Spinach. They’re loaded with veggies, like onion, bell pepper, cucumber, avocado and spinach, so we’re getting all kinds of nutrients. We’ve also got a lot of protein from the chicken and cheese. These are great for meal prepping for the week too.

Next up, it’s all about cozy soup. This Chicken Wild Rice and Mushroom Soup is ready in 90 minutes and absolutely full of flavor. I suggest making this one on the weekend, and eating it through the beginning of the week. That way you’re not in a rush. It pairs great with sandwiches, like a sourdough grilled cheese or this Chipotle Chicken Sandwich.
A One Pot Lasagna
Last week when I was working on the deconstructed burger bowls, I found the term “deconstructed lasagna.” I was determined to make my own version and that I did. Y’all this is one pot meal and so delicious. I have a regular lasagna recipe on the website too, but I promise, this is worth trying.
It has all the flavors you want from lasagna, but without the hassle of boiling the noodles and assembling all the layer.
