We are back from Disney and I think I’m officially wore out from traveling. My husband mentioned going to the beach in two weeks and I acted like no one was communicating with me.
We had so much fun that I hardly took any pictures. I did get this cute one with the family in Epcot though. Me and the girls had to get matching shirts..of course!
I ate sooo many sweets, from Sprinkles cupcakes to Beignets coated in powdered sugar and I loved every minute of it. My Aunt Sherry met us in Disney, which is always such a treat, and I hate that she took this photo instead of being a part of it. She’s been making an effort to meet us there the last few years, and it’s so special for me and the kids.

Summer Baking
You would think that I’d be sick of sweets after eating my way through them in Disney, but I’m not. I love sugar. It makes me happy, especially when paired with a Vanilla Latte. What I don’t like, is over the top dessert recipes, that dirty millions of dishes, so I’m sharing my easy favorites with you.
Blueberry Pound Cake
This first dessert is a Blueberry Pound Cake. It uses fresh berries and only requires about 30 minutes of actual work in the kitchen. The rest is just baking and cooling. It’s soft, moist (sorry if you hate the word) and spectacular for Summer.
Peach Mango Hand Pies
The next recipe was inspired from our trip to Maine. We went to a bakery that had Strawberry hand pies. Peaches are in season currently in North Carolina, so I decided to create Peach and mango hand pies.
The recipe can’t get any easier and uses fresh peaches and mangoes that are diced small and quickly transformed into a syrupy filling. Instead of rolling out our own pie dough, it’s Summer for goodness sake, we use store bought puff pastry. An egg wash is brushed on to create an extra golden and flaky exterior!
