I bought a gallon of Apple Cider today, which means I have transitioned to everything Fall. I still haven’t had my first Pumpkin Spice Latte from Starbucks though..all in good time.
Fall to me is all about Apple picking, visiting the pumpkin patch, and making ridiculous amounts of soup (more on that next week). It’s also the beginning of Comfort food season!
This week I’ve got a few slow cooked meals to share with you, one in the crockpot and one in the oven. Both are really delicious and super simple for those busy nights. But let’s start with a Fall breakfast stuffed with apples, that can easily pass as dessert too.
Apple Pie Filled Cinnamon Rolls
I’ve seen many versions of this recipe, mostly that throw crescent dough in a casserole dish with a can of apple pie filling. I’m not a fan of any fruit filling from a can, especially during apple season. We’re using fresh apples to create a really simple filling that stuffs inside the cinnamon rolls. It’s good, really good.

A Pork Tenderloin Roast
First, we’ve got a Pork Tenderloin Roast with a yummy pork gravy from the drippings. This meal looks like it takes several hours to make, but it’s actually ready in an hour and gives you all the comfort food feels.
Sirloin Tip Roast
This recipe is made in the crockpot and cooks on low for 8 hours. It only takes 15 minutes to prep, then let it cook in the slow cooker when you go about your day. If Sirloin Tip Roast sounds a little unfamiliar, it’s a lean cut of beef that tastes best slow cooked. My butcher was able to cut it for me (you want between a 3 to 4 lb roast), but you can also use a Chuck Roast if it’s not available.
The girls and I are headed to a baby shower in Nashville this weekend for my sister in law. It’s her first baby and I’m super excited.
We’re driving up just for the day and headed back the next morning..ROAD TRIP! We will pass Asheville, NC on the way and I’m planning to make a quick bakery stop. If anyone has recommendations, let me know.
