Dads do a lot and I like to celebrate people with food, and that’s just what we’re doing this week.
I’m thinking about being an extra nice wife all weekend and driving up to our Whole Foods to get oysters tonight. Whole Foods has 12 oysters for $12, which is so inexpensive compared to restaurant prices. This does involve shucking them yourself, which can be a pretty serious job though.
This week I have a few different recipes to share..all that I am very excited about. One of my hubby’s favorites is this Pimento Cheese with Jalapeños. He’s been eating it on ritz crackers after work the last few days and he loves it on his burgers too.
This is great to serve as an appetizer and takes just 10 minutes to prep. Make it for dad this weekend!

Grilling Recipes
Of course, I have to share some popular grilling recipes too! These BBQ Boneless Smoked Chicken Thighs are made on the Traeger Smoker and super easy to make. They’re brand spanking NEW to the website this week too.
My most popular Grilling recipe on the blog are these Blackstone Smash Burgers. You don’t need a Blackstone, as they can be made on any griddle. They are simply seasoned, and flattened on the griddle. Serve them up with fried onions on a brioche with my Smashburger Sauce.

Jalapeño Pimento Cheese
Makes about 1 and 1/2 cups
Time to Prep: 10 minutes
Total Time: 40 minutes
Ingredients:
1 jalapeño, minced (seeds, stem and membranes removed)
8 ounce block of sharp or extra sharp cheddar cheese
4 ounces cream cheese, softened for 30 minutes at room temperature
3 tablespoons mayonnaise
2 tablespoons jarred pimentos
1 teaspoon garlic powder
½ teaspoon paprika
1 teaspoon salt
⅛ teaspoon pepper
Instructions:
Allow the cream cheese to soften on the countertop for 20 minutes prior to starting the recipe. Grate the cheddar cheese on the larger section of the cheese grater. Mince the jalapeño and make sure to wear gloves or wash your hands well after.
Add the cheddar cheese, jalapeño, pimentos, mayonnaise, cream cheese, and spices into the stand mixer bowl, or use a large bowl with hand mixer.
Using the beater attachment, combine on medium low speed for a few minutes until fully combined. Place covered with plastic wrap in the fridge for 30 minutes or up to overnight.
Serve and enjoy with crackers, veggies and more!
Substitutions:
If you're looking for extra spicy, add a few dashes of cayenne pepper or hot sauce into the mix.
To make the dip thinner, stir in a few more tablespoons of mayonnaise.
Expert Tips:
Shred the cheddar cheese, instead of buying pre-shredded for the best taste.
Allow the cream cheese to soften on the countertop for 20-30 minutes prior to starting the recipe, to make it easier to blend into the other ingredients.
