I’m still working on my feeling spicy vibes. May in the South means I’m trapped in a bubble full of pollen. Hey, maybe tomorrow, I’ll really spice up my plate in hopes to clear out my sinuses.
I absolutely love Cinco de Mayo. It’s so fun to go out to a Mexican restaurant & get authentic food or just stay at home, skip the crowds, and make tacos and margaritas in your own kitchen. Either way, I’m cool with your choice, but if you’re planning on cooking, I’ve got some awesome Mexican recipes for you!
Margaritas
We’re starting out with the drinks because it’s been a long week..
This Spicy Pineapple Margarita has all the things. It’s refreshing, sweet and spicy and has a tajin rim around it. You can’t go wrong with this bad boy.
If you’re not wild about spice, try these frozen Strawberry Margaritas! They are equally as tasty and they’re frozen, which is magical.
Appetizer Idea
My most requested appetizer as of lately, is this Elote Dip. It’s basically Mexican Street Corn in a bowl and it is delicious. Serve it with tostitos scoops, in order to get the most dip physically possible on a chip.
Main Course
My brand NEW recipe for Crispy Baked Chicken Tacos will be a crowd favorite. These assemble, then bake on a cookie sheet, which I love, because you can bring out several hot tacos at a time, rather than frying shells one by one.

What’s your Cinco de Mayo plans? Are you staying in or going out?
We’re headed camping tomorrow, so I will most likely be enjoying my margarita from the cold beach in the Outerbanks. I’m always up for an adventure! We just got a truck camper and plan on going on a lot more trips. I can’t wait to explore the beautiful National parks we have. This summer Acadia is on our list. If anyone has any tips (or better yet, food recommendations) make sure to email me!
