We are in the full swing of Summer and our normal busy schedule is long gone. I’m nowhere ready to live it again and I’m soaking the present moment all up.
The 90 degree days are here and I’m thinking about whipping up a batch of my basil lemonade or possibly Strawberry Margaritas if the kids keep making me see red on the daily. Can’t we all just get along?
July 4th is almost here and I’m excited because my husband’s sister is heading into town from Cali and she’s pregnant with her first baby. I should also mention that she has been a huge supporter behind this growing business of mine and I love her.
The Recipes
This fourth of July we are keeping most of the heat out of the kitchen and I’ve only got one stovetop recipe for you. First, we have these Smoked Vegetables tossed in a nice blend of seasonings. If you want a little extra heat, make my hot honey to drizzle over the top.
Next, the only stovetop side dish recipe, are these Baked Beans with ground beef. They’re not very pretty, but they are absolutely packed with flavor and tons of protein too. Sweet bbq sauce meets a bit of heat from the jalapeño for a delicious match.
The Video
This video has the two side dish recipes above, plus a really easy coleslaw recipe and a quick tutorial on how to cut a watermelon.
Coleslaw Ingredients:
11 ounce coleslaw bagged mix (throw away the dressing that came with it)
1/2 cup mayonnaise, I prefer Hellmanns
3 tablespoons apple cider vinegar
1 tablespoon granulated sugar
1/4 teaspoon sea salt
1/8 teaspoon black pepper
Into a large bowl, whisk together the mayonnaise, vinegar, sugar, and salt and pepper until nice and creamy. Toss in the coleslaw mix. Refrigerate for 30 minutes before serving.
That's it for today. I hope you all have a wonderful holiday celebrating America.
