Happy New Year to my favorite people! I feel bad saying this, but I’m excited about the Holidays being past us. Cheers to the new year and next Holiday season all I want is to be healthy at Christmas. This was my second year sick and and still having to entertain..mama’s tired.
I’m feeling great about this New Year though. I get very inspired at this time of year. I’m all about new year, fresh new ideas & new opportunities. I also bought a new planner and pens, which are my favorite things to buy in life. Weird, I know, but I’m ready!

If you have lifestyle goals of trying to eat healthier, you’re in luck, because I’ve got lots of healthy recipe ideas, that aren’t boring and still packed with flavor. You can’t just eat plain baked chicken and steamed broccoli. You gotta live!
Healthy Soups
Soups are my absolute favorite food to make in Winter. They’re cozy, usually made all in one pot, and they’re delicious. This Turkey Chili has all the things and it’s inspired by the Panera version.
It only takes 15 minutes to prep and is ready in an hour! Plus, it’s really healthy and loaded with protein, which will keep you full longer (and out of all the unhealthy snacks in the pantry).

Healthy Dinner Ideas
When it comes to eating healthy, I like to think about eating a lot of colors. Plus, Winter can be drab in general and bright foods make me cheer up.
This Butternut Squash is so pretty and it’s a really healthy Winter squash filled with all kinds of nutrients. It’s sautéed in the skillet and sprinkled with a touch of cinnamon and sugar for sweetness. It’s also BRAND NEW to the blog this week:)
This Chicken Kofta or Mediterranean Chicken Meatballs, are great for dinner or for meal prepping on Sunday for the week. They’re easy to whip up and packed with healthy veggies. They also taste amazing with rice, cucumbers and tzatziki sauce or on a pita!
For another main course, try this Chicken and Chorizo Paella, which is one of my favorite Weeknight Meals. I like to brighten it up with fresh lemon wedges and lots of parsley!
Another colorful weeknight favorite are these Couscous Stuffed Peppers and they’re vegetarian friendly. Just make sure to use vegetable stock instead of chicken stock. They are loaded with flavor and tossed in marinara sauce!
