Yesterday was the first day of cooler weather, but it’s still hot in the South. I’m talking 80 degrees instead of 95, but nowhere near where I want a pumpkin spice latte. I’m looking forward to that day.
This weekend is Labor Day. I have so many grilling recipes on the site, that I really wanted to do something new this week, but still get those fresh Summer flavors.
A Spicy Southwest Salad with Chicken
I decided on a flavor and protein packed salad with some heat! This Southwest Salad has marinated spicy chicken, black beans, corn, avocado & more, with a Spicy Southwest Dressing.
It’s so tasty and a must try. You can grill the chicken if you plan on using the grill to bbq this weekend, or just make it inside. Ready in less than an hour and 30 minutes of this time are for the chicken to marinate.

Football Food
This Thursday is the first game of Football season, Kansas City vs Detroit, and I can’t leave you hanging with no game day recipes. Try my Walking Taco Casserole, also known as Frito Pie, that’s layered with seasoned beef, fritos, then taco toppings. It only takes 25 minutes to make and it is perfect for Game day.
Happy 3 day weekend to my favorite people! Enjoy family, friends and good food. Next week, I’ve got more killer appetizers for you. Until then..
