It’s the weird week between Christmas and New Year’s where no one knows what day it is. I’m enjoying sleeping in, because I picked up a nasty virus a few weeks ago, that I’ve yet to swing.
My energy levels are at a serious low, but tomorrow night I’m going to slide some ice skates on and skate circles around some Southerners. Technically I’m Southern, but I spent my first 9 years of life on lots of ice in Buffalo NY, and guess what? This little lady learned how to skate. My older cousin used to scream things at me as he lapped me, so now I’m impervious to any distraction on the ice, haha! Plus, my husband doesn’t think I’m any good, so now I have something to prove. Someone from Buffalo would probably rank me a 6 out of 10, but here in the South, I’m a solid 9.
I don’t really take the New Year’s lucky foods to serious, but it is fun and depending on your culture, it can be a big deal. I love traditions that pass down from generations. Greens are supposed to resemble money, which I’m pretty sure most of us could use some more next year. Grocery shopping for the month has officially passed my mortgage (not cool).
So let’s get some cash flowing..
This Arugula and Spinach Salad is new to the blog and combines baby arugula and baby spinach with glazed pecans, bacon, parmesan cheese, and cranberries. It’s tossed in a simple honey mustard dressing and it’s a new favorite salad of mine. Great for the New Year’s Holiday, but also all year round.

Another really popular salad at this time of year is my Kale and Pomegranate Salad. Pomegranate is a symbol of good fortune in Greece and other countries. Plus, it’s delicious!
Black Eyed Peas are another must have lucky food for the New Year. I’m not crazy about their flavor, but combine them with other ingredients in this Cowboy Caviar, and it’s always a hit! Serve with tortilla chips for a fun appetizer.
Pork is another food that symbolizes good fortune! Try my Dutch Oven Pork Tenderloin, Smoked Pork Butt, Pulled Pork Egg Rolls, or these Mini Meatballs.
