I’m writing this week’s newsletter wrapped up on the couch with a blanket. I accomplished very little on the blog this week because we took a vacation to Lake Tahoe. I’m currently exhausted from traveling and I’m in a pizza ordering mood. It’s FriYAY!
Lake Tahoe was just what we needed. We stayed in the perfect cabin with amazing snowy mountain views. My sister in law and her husband met us there with their new baby. He’s only 3 months old and the sweetest.
Quincy, their dog came too (in the picture below). He’s my buddy and would try and get my attention every time I got near the baby. It was hilarious.
We cooked almost every meal. Some of the highlights were a girl’s lunch with these Chicken Lettuce Wraps, that we enjoyed while the boys went snowboarding.
The first day, we made a similar soup to this Italian Wedding paired with the best Ciabatta bread from a local bakery in Truckee (we went through 2 loaves in 3 days). The air bnb we stayed at had a fully stocked kitchen, which was awesome.
I went snowboarding with the kids on one of the days and quickly learned it’s a lot harder than the NC mountains, where you get down in 5 minutes. To be honest, I suck and should have got myself a nice little lesson.
Me and the girls went to the lodge to grab lunch and it was $24 dollars for a basket of chicken tenders and fries. Y’all $16 for a baked potato with sour cream. What the?!
I had the BEST vanilla latte I’ve had in a while from a little cafe at Northstar called Vous. The kids had creamy hot chocolates too and said they were fabulous. I feel like a hot drink really solves a lot of my problems, haha!
It took us 2 (1 hour) car rides and 2 planes to get us home, but it was totally worth it.
Easy Breakfast Recipes
This week, let’s talk easy breakfasts. We are working our way into Spring and this Strawberry Banana Smoothie Bowl is one of my kid’s favorite breakfasts, especially when the weather starts to warm up.
It takes just a few minutes to make and instead of just a boring smoothie, it’s topped with fresh fruit and granola.

If you have leftover Strawberries from the Smoothie bowls, make this Strawberry Ricotta Toast, which features a whipped ricotta with honey and fresh strawberries with basil and balsamic glaze. It’s ridiculously good (I think it’s better than avocado toast).
This Egg Ham and Hashbrown Casserole is delish and only takes 10 minutes to prep. It’s a great breakfast to save for leftover Easter ham.
