This was a good week. I got into the swing of the kids back to school routine, got out a ton of recipes, and even managed to make it to the gym two days. Air high fives all around.
Me and the girls even squeezed 9 holes in at the golf course. I’m trying to learn golf because my oldest plays and I like the idea of it. I’ve also come to the realization that it takes years to get good at it. How can hitting a little tiny ball be so difficult? I never played sports, so I’m not a natural athlete.
Fun fact: I used to be a beer cart girl at the golf course. It was probably my favorite job; other than food blogging, of course.
Back to cooking..
I’ve been super intentional about helping busy moms with getting dinner on the table, especially in the beginning of this school year. Each year gets crazier with paperwork & schedules, and if I have to download one more app on my phone for the kids, I’m gonna lose it.
One of the easiest dinner options is picking up a store bought rotisserie chicken. This week I’ve got two rotisserie chicken recipes that are packed with flavor & the kids will like too.
Tater Tot Casserole
I’ve been seeing these recipes all over the internet, but all of the recipes include canned soup. I wasn’t feeling that, so I made my own version that is like a chicken pot pie base with a tater tot topping. It’s really tasty and only needs about 15 minutes of prep time. Then, pop it right into the oven.

Chicken Chipotle Melts
Our second recipe is a Panera copycat sandwich, but I used fresh Ciabatta bread from our farmer’s market..OMG so good! If you can find a good bread, go for it. Panera uses a Focaccia, which would also be amazing..or even brioche buns.
This sandwich features rotisserie chicken, smoked gouda, avocado, peppadew peppers, cilantro and my 5 minute homemade chipotle mayo recipe.
It’s stacked with smoky flavor from the mayo and gouda and the peppadews bring in a sweet heat. The recipe only takes 20 minutes and it’s a must try!
Dessert
Let’s not forget dessert. Sugar makes me happy (& so does caffeine). These caramelized peaches cook down in a brown sugar sauce for some serious sweetness. Serve them warm with a scoop of vanilla ice cream topped with a sprinkle of cinnamon and you’ll be in heaven.

I’m headed to my youngest daughter’s school this afternoon for lunch. She managed to talk me into bringing her mcdonalds and on the second week of school. I’m such a sucker.
