Somehow it went from New Year’s to Easter, which I’m cool with. Winter always lasts forever, but I’ve been doing this thing where I plan a cool trip in February for our family and it’s been really helping with those Winter blues. We also had a really mild Winter here in North Carolina too. No snow though, which is so sad.
I had to get a root canal this morning..ouch! I’m a clencher at night and I broke my back molar. Fun times. However, my endodentist is also my neighbor and he’s such a cool guy. His family in general is awesome. His wife fought through breast cancer last year, and had the most positive attitude about it. She’s cancer free now and doing great. I just love them.
Does anyone have big Easter plans? I’m hosting at our house and I’m super excited to share my menu with you, some recipes are new and some from previous years.
We’re doing an Easter egg hunt at my parents house in the morning for my kids, the cousins, and some other kiddos. I’ve packed a golden egg bigger than my head full of goodies, that I plan to hide somewhere outside. It even has a $15 target gift card in it, and I’m excited to watch how that unfolds. Hopefully no one loses an eye. Egg hunts can get wild.
An Easter Favorite
One of my favorite recipes that I’ve made multiple times this month, are these Banana Carrot Muffins. They’re every bunny approved 🐰 and so tasty and moist. It’s like carrot cake meets banana bread in your own personal sized treat. The batter comes together in one bowl and they’re so easy to make.
These would be delicious for Easter breakfast, brunch, and dessert. This recipe makes 12 muffins, so double it up if you need to. They taste good for up to 3-4 days if you store them properly.

Easter Breakfast or Brunch
We’re having a super casual brunch before our Easter egg hunt, but I know this Brioche French Toast Casserole will make the menu. It’s so easy to prep in just 5 minutes, then it bakes in the oven to perfection. The brioche bread, eggs and cream make it nice and rich. It’s great to pair with syrup, fresh fruit and whipped topping. If you want to be extra, make this Strawberry compote or Caramelized peaches. This one serves 6-8 people and is made in a 9x13 casserole dish.

Easter Dinner:
I’m going straight from brunch to dinner because of course I’m snacking in between, but I’m not eating any large meals or cooking anything extra. If you’re thinking spiral ham, this double smoked ham is a winner. Pair it with this pineapple ham glaze.
If you’re going to oven bake a ham, this pineapple glaze still works great. Just toss that packet that it comes with and make the homemade glaze instead. It’s worth it.
The Easter side dishes are my absolute favorite and here is what I’m whipping up..
Brown Sugar Honey Glazed Carrots
Caramelized Brussels Sprouts or Crack Green Beans- I haven’t decided yet, maybe I’ll make both.
Easter Dessert:
I love easy Easter desserts that you can prep ahead, so you’re not in the kitchen the whole day. These Cadbury Mini Egg cookies are chewy and loaded with chocolate. They can be made ahead and are really simple..even the kids can help.
