We are on our way to the Holiday season..everyone hang on! However, I can’t let the last week of September (aka Souptember) go by without showcasing some of my favorite soup recipes.
Let me first mention, that I am obsessed with soup. My husband has to remind me often in Winter that I can’t just live off soup. I think he’s wrong though. I’m a surviver and I’m pretty sure I’d make it.
We did Nashville last weekend. Drove up Saturday, stopped in Knoxville, which was amazing, by the way. It was a Tennessee game day and me and the girls were the only ones not wearing orange. Oops! I kept singing the country song “I’m wearing Tennessee Orange for him” while my almost 13 year old acted like she didn’t know me.
We waited in line for Crepes at The French Market Creperie downtown for about 30 minutes and I paid $40 to park. It was worth it. We ordered sweet and savory versions and they had a weekend special for Beignets, so of course, I had to order those too.
When we made it to Nashville, we went to my sister in laws baby shower, which was so much fun, celebrated her (+ ate delicious pulled pork bbq). Then, donuts at my other sister-in-laws house in the morning. We just stayed one night, then drove home, eek. Rough 8 hour drive back. All good things though and such a fun weekend.
The SOUP
Kicked off this week with my favorite soup recipe, Classic French Onion. It’s the whole thing- caramelized onions, cooked with red wine and beef stock for a rich broth, then topped with toasted bread and gruyere cheese. It’s always a crowd favorite and a must try!

Healthy Soups
If you are still in that Summer mode and want to ease into comfort food, try these Healthy Soup recipes that I recipe tested to perfection this week.
The first is Turkey Lentil Soup, which is full of protein, fiber and vitamins from all the turkey, legumes and veggies. It’s ready in just 45 minutes!
Next, I have this Vegetable Rice Soup. It started as just plain vegetable and recently got an update to add the rice for a more filling meal. This soup only takes an hour to make and it’s vegetarian friendly.

That’s a wrap for this week! I hope everyone has a magical weekend. I was planning to get some much needed sleep, but I just learned that we will be dog sitting, so those plans are a bust, haha! At least Hutchy Boy will have a friend.
Thanks for reading and being my favorite people. Big HUGS!
