This week was chaos, but in a good way. We had a lot of family in town from my husband’s side, which usually means our house becomes the main space for entertaining. Fortunately, entertaining is one of my favorite things to do! However, I am now tired and will need at least three days to recover (and be off of laundry duty).
Pork Butt Recipe #1
I was expecting 14 people on the 4th of July, so the day before, I spent the whole day cooking. I smoked a Big Boston Butt and made a ton of salads, like my Hawaiian Macaroni Salad and Elote Corn Salad. It was so much easier prepping the day ahead…highly recommend!
Look how good this big Boston butt turned out. We’ve got the bark and an interior smoke ring (you can see it more on the sandwich below) that all the pit masters strive for. To be honest with you, my husband taught me how to use the smoker, so he deserves most of the credit, but I will take some:)
I want to know how you eat your pulled pork…
For me, it’s a bbq pork sandwich all the way. Pour on the bbq sauce and lather on the coleslaw! I want that crunch.
Pork Butt Recipe #2
To my surprise, we actually had leftover pork butt and quite a bit. We usually make homemade filling for empanadas, but this time my husband asked for egg rolls. At first, I thought I was going to go the Asian flavor route, but he said with bbq sauce. I’m like ummm ok, and then came the ideas…
Bring in the Redneck Egg Roll. It’s got pulled pork, red onion, jalapeño, slaw and bbq sauce, and it’s honestly AMAZING!

Oh, and they’re dipped in Ranch! These are so yummy. If you don’t want to smoke a pork butt and have a bbq restaurant nearby, grab a few pounds of pulled pork to go for this recipe.

That’s it for this week. I wonder what I’ll make next! Me and the girls are headed to Disney next Sunday and I’ve got lots of cooking to catch up on before then.
